The first Bison Hill Grill event of 2025 ran in March. Before it did, we ran through the kit.
Winter storage is where poorly built equipment fails. Materials that can’t handle temperature change, hardware that corrodes, wooden elements that split or warp. We’ve built the range to avoid all of that — but we still check.
The Winter Kit Check
Every Gaucho apron in the Grill’s kit came out of storage in perfect condition. No stiffness in the denim, no hardware issues, no stitching failures from the temperature differential. The King Forks and Bison Skewers were clean and rust-free — 420 stainless as designed. The BBQ Block had been oiled before storage and came out ready. English oak handled well.
That kit check is its own product test. A tool that survives UK winter storage and comes out ready for use is confirming the Buy Once commitment. It’s not just a seasonal check. It’s evidence.
The First New Occasion of 2025
The first new event type we took on in 2025 was a private chef’s dinner in Kent. An indoor/outdoor hybrid: a private chef running the full menu, with Bison Hill providing the live-fire station for the main course only. One station, one dish, one window in the middle of a full dinner service.
The challenge was fire management in a semi-enclosed environment. Managing heat, smoke, and fuel in a partially enclosed space is a different problem from a full outdoor setup. The fire has less airflow and you have less margin for adjustment. It required different positioning and more conservative fuel management. We learned from it.
The Season Opening
Spring 2025 also brought the first confirmed booking from a Surrey food festival for the summer — the festival appearance we’d been targeting since December 2024. Public cooking, volume service, brand visibility at scale. That booking confirmed the Grill was operating at the level we’d planned for.
The online shop was tracking well too. Early season traffic was strong, and the gift set range was finding its audience ahead of the Father’s Day window. The year was opening well.
